A healthy and wholesome Turkish-style savory pastry made with oat flour, eggs, yogurt, cheese, and fresh dill. Quick to prepare and baked to golden perfection — a nutritious alternative to traditional börek.


🥬 Ingredients

Batter

  • 1.5 cups (150g) oats, blended into flour
  • 1 large eggs
  • 2 tablespoons (30g) plain yogurt
  • 1 packet (10g) baking powder
  • 1/2 teaspoon salt

Filling

  • 100g (3.5 oz) white cheese (feta or beyaz peynir), crumbled
  • 2 tablespoons (about 10g) fresh dill, chopped

Topping

  • 1 large egg yolk
  • 1 teaspoon sesame seeds or nigella seeds (optional)

👨‍🍳 Instructions

  1. Preheat your oven to 180°C (356°F) and line a baking tray with parchment paper. Blend the oats in a blender or food processor until they form a fine, smooth flour.
  2. In a large mixing bowl, combine the oat flour, 1 egg, yogurt, and baking powder. Mix well until a soft, slightly sticky dough forms. If the dough feels too wet, add a small amount of extra oat flour, one tablespoon at a time.
  3. Fold in the crumbled cheese and chopped fresh dill, mixing gently until evenly distributed throughout the dough.
  4. Divide the dough into 6 equal portions and shape each into a round patty or oval roll about 1.5 cm (0.6 inch) thick. Place them on the prepared baking tray, spacing them slightly apart.
  5. In a small bowl, whisk the egg yolk and brush it generously over the top of each piece using a pastry brush — this will give a beautiful golden-brown glaze. Optionally sprinkle sesame or nigella seeds on top.
  6. Bake in the preheated oven at 180°C (356°F) for 20–25 minutes, or until the tops are deep golden brown and the pastries feel firm to the touch. Remove from the oven and allow to cool for 5 minutes before serving.

💡 Tips & Variations

  • Substitute dill with fresh parsley or chives if you prefer a milder herb flavor.
  • You can use low-fat yogurt or Greek yogurt interchangeably — Greek yogurt will make the dough slightly denser and more protein-rich.
  • These pastries freeze well — bake, cool completely, then freeze in an airtight bag for up to 1 month. Reheat in the oven at 160°C for 10 minutes from frozen.
