A rich and creamy pasta dish combining caramelized onions, pancetta, and cheese in a single pot for easy cleanup and maximum flavor.
🥬 Ingredients
Main Ingredients
- 3 (about 900g) large yellow onions
- 2 tbsp (30g) butter
- 1 tbsp (15ml) vegetable oil
- 225g (8 oz) pancetta, diced
- 2 garlic cloves, minced
- 2 tbsp (30ml) white wine
- 1 tsp salt
- 1/2 tsp fresh thyme
- 1/2 tsp fresh rosemary, chopped
- 225-285g (8-10 oz) pasta (penne or rigatoni)
- 720ml (3 cups) beef broth
- 240ml (1 cup) heavy cream
- 100g (1 cup) fresh Parmigiano-Reggiano, grated
- 60g (1/2 cup) fresh Gruyère, grated
👨🍳 Instructions
- Slice the onions into thin half-moons. Heat butter and oil in a large heavy-bottomed pot or Dutch oven over medium heat until butter is melted and foaming.
- Add sliced onions to the pot with a pinch of salt and cook over medium-low heat for 20-25 minutes, stirring occasionally, until deeply caramelized and golden brown.
- Add diced pancetta to the pot and cook for 3-4 minutes over medium heat until crispy and fat is rendered. Add minced garlic, thyme, and rosemary, cooking for 30 seconds until fragrant.
- Pour in white wine to deglaze the pot, scraping up any browned bits from the bottom. Cook for 1 minute to reduce slightly.
- Add the pasta, beef broth, and salt to the pot. Bring to a boil over high heat, then reduce to medium and cook for 12-15 minutes, stirring frequently, until pasta is al dente and most liquid is absorbed.
- Stir in heavy cream and cook for 2-3 minutes until slightly thickened. Remove from heat and gradually stir in the Parmigiano-Reggiano and Gruyère until melted and creamy.
- Taste and adjust seasoning with salt and pepper. Serve immediately while hot, garnished with additional cheese and fresh herbs if desired.
💡 Tips & Variations
- Don't rush the onion caramelization - properly caramelized onions are key to the French onion flavor
- If pasta seems too thick, add a splash more broth or pasta water to reach desired consistency
- Substitute pancetta with bacon or omit for a lighter version
