Tender chicken thighs and perfectly seasoned potatoes cooked together in one pot with a flavorful lemon and herb sauce. An effortless meal that delivers maximum flavor with minimal effort.
🥬 Ingredients
Main Ingredients
- 6-7 pieces chicken thighs
- 2-3 medium potatoes
For the Sauce
- 1 bottle (500ml) sparkling water
- 1/2 lemon lemon juice
- 1 tablespoon all-purpose flour
- 100ml (1/2 tea glass) olive oil
- to taste salt
- to taste black pepper
- 1 teaspoon red pepper flakes
- 1 teaspoon dried thyme
👨🍳 Instructions
- Place the chicken thighs in a single layer in a heavy-bottomed pot or Dutch oven, ensuring they fit comfortably without overcrowding.
- Wash and peel the potatoes, then slice them into rounds about 1cm (1/2 inch) thick. Arrange the potato slices over and around the chicken thighs.
- In a mixing bowl, whisk together the sparkling water, fresh lemon juice, flour, olive oil, salt, black pepper, red pepper flakes, and dried thyme until well combined and the flour is dissolved.
- Pour the sauce mixture evenly over the chicken and potatoes, ensuring everything is well-coated. The liquid should partially cover the ingredients.
- Cover the pot with a tight-fitting lid and place over medium-low heat. Cook for approximately 1 hour, checking occasionally to ensure the liquid hasn't evaporated completely.
- Test doneness by checking that the chicken easily falls off the bone and the potatoes are tender when pierced with a fork. Serve immediately while hot.
💡 Tips & Variations
- Use bone-in, skin-on chicken thighs for the most tender and flavorful results
- If the sauce reduces too much during cooking, add a little more sparkling water or chicken broth
- Let the dish rest for 5 minutes after cooking to allow the flavors to meld before serving
