Australian-style loaded nachos featuring Doritos topped with baked beans and melted cheese - a surprisingly addictive combination that shouldn't work but absolutely does.

🥬 Ingredients

Main Ingredients

  • 200g (7 oz bag) Doritos tortilla chips
  • 420g (15 oz can) canned baked beans
  • 200g (7 oz) shredded cheese (cheddar or Mexican blend)

Optional Garnishes

  • 120ml (1/2 cup) sour cream
  • 2-3 stalks green onions, sliced
  • to taste jalapeño slices

👨‍🍳 Instructions

  1. Preheat your oven to 200°C (400°F). Spread the Doritos in a single layer on a large baking sheet or oven-safe dish, creating an even base for the toppings.
  2. Spoon the baked beans evenly over the Doritos, making sure to distribute them across the chips rather than dumping them in one spot. The beans should cover most chips but not completely soak them.
  3. Sprinkle the shredded cheese generously over the beans and chips, ensuring good coverage so every bite gets some melted cheese.
  4. Bake for 8-10 minutes until the cheese is fully melted and bubbly, and the edges of some Doritos are slightly toasted. Watch carefully to prevent burning.
  5. Remove from oven and let cool for 2-3 minutes. Add optional garnishes like sour cream dollops, sliced green onions, and jalapeños before serving immediately while hot.

💡 Tips & Variations

  • Use thick, sturdy tortilla chips to prevent them from getting too soggy from the bean liquid
  • Drain some liquid from the baked beans if they seem very saucy to maintain chip texture
  • Try different cheese blends - a mix of cheddar and mozzarella works particularly well for optimal meltiness
