A bold, flavorful one-pot dish featuring ground beef and cabbage simmered in a rich, spiced gravy that transforms boring cabbage into comfort food gold.
🥬 Ingredients
Main Ingredients
- 900g (2 lbs) ground beef (80/20)
- 1 large head green cabbage, chopped into bite-sized pieces
- 1 large white onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
Seasonings and Sauce
- 45g (3 tbsp) all-purpose flour
- 30ml (2 tbsp) tomato paste
- 30ml (2 tbsp) garlic, minced
- 355-475ml (1.5-2 cups) beef broth
- 15ml (1 tbsp) Worcestershire sauce
- 30ml (2 tbsp) Salt-Free Tony's seasoning or Cajun/Creole blend
- 15ml (1 tbsp) smoked paprika
- 5ml (1 tsp) salt
- 5ml (1 tsp) - optional black pepper
- to taste - optional red pepper flakes
👨🍳 Instructions
- Brown the ground beef in a large pot or Dutch oven over medium-high heat, breaking it up with a spoon as it cooks until no longer pink, about 5-7 minutes. Do NOT drain the fat as it will add flavor to the dish.
- Push the cooked beef to the sides of the pot, creating a well in the center. Add the tomato paste to the center and cook for 2 minutes, stirring occasionally until it darkens slightly and becomes fragrant.
- Add the diced onions and bell peppers to the pot and cook for another 2 minutes, stirring to combine with the tomato paste and beef until vegetables begin to soften.
- Sprinkle the flour over the mixture and stir thoroughly to coat everything evenly. Add the Salt-Free Tony's seasoning, smoked paprika, salt, beef broth, and Worcestershire sauce, stirring constantly to prevent lumps.
- Add the minced garlic and bring the mixture to a simmer. Let it bubble gently for 5 minutes, stirring occasionally, until the sauce begins to thicken.
- Add the chopped cabbage in batches if your pot is full, stirring each addition until fully coated in the gravy. Cover the pot and reduce heat to medium-low.
- Simmer covered for 10-15 minutes, stirring occasionally, until the cabbage reaches your preferred texture - tender but still with some bite. If the sauce seems too runny, remove the lid and cook for a few additional minutes to reduce.
- Taste and adjust seasoning with additional salt, pepper, or red pepper flakes as desired. Serve hot over rice or enjoy on its own.
💡 Tips & Variations
- Don't drain the beef fat - it creates the base for a rich, flavorful gravy that coats the cabbage beautifully
- Add cabbage gradually if your pot is small, allowing each batch to wilt slightly before adding more
- This dish tastes even better the next day as the flavors meld together, making it perfect for meal prep
