A modern twist on egg salad featuring jammy hard-boiled eggs marinated in a tangy Asian-inspired dressing with chili garlic crisp and fresh herbs.
🥬 Ingredients
Eggs
- 4 large eggs
Ceviche Marinade
- 45ml (3 tablespoons) rice vinegar
- 30ml (2 tablespoons) neutral oil
- 30ml (2 tablespoons) soy sauce
- 30ml (2 tablespoons) maple syrup
- 5ml (1 teaspoon) sesame oil
- 15-30ml (1-2 tablespoons) chili garlic crisp
- 1/2 medium red onion, thinly sliced
- 5ml (1 teaspoon) everything bagel seasoning
- to taste ground black pepper
Garnish
- 3 sprigs green onions, thinly sliced
👨🍳 Instructions
- Bring a large pot of water to a rolling boil over high heat. Carefully lower the eggs into the boiling water using a slotted spoon to prevent cracking.
- Cook the eggs for exactly 6.5 minutes for jammy yolks or 8 minutes for medium-hard yolks, maintaining a gentle boil throughout. Immediately transfer the eggs to an ice bath using a slotted spoon and let cool for 10 minutes to stop the cooking process.
- While eggs are cooling, prepare the marinade by whisking together rice vinegar, neutral oil, soy sauce, maple syrup, sesame oil, chili garlic crisp, thinly sliced red onion, and everything bagel seasoning in a medium bowl until well combined.
- Carefully peel the cooled eggs and slice each in half lengthwise, revealing the jammy yolks. Gently add the halved eggs to the marinade and toss carefully to coat without breaking the yolks.
- Transfer the marinated eggs to a serving plate, spooning any remaining marinade and onions over the top. Garnish with thinly sliced green onions and a final crack of black pepper before serving immediately.
💡 Tips & Variations
- For perfectly peeled eggs, use eggs that are at least a week old and start them in boiling water rather than cold water
- Let the eggs marinate for 5-10 minutes before serving for deeper flavor penetration
