A traditional Spanish aioli enriched with honey, creating a sweet and garlicky emulsion perfect for dipping or spreading.
🥬 Ingredients
Main Ingredients
- 3 large garlic cloves
- 100ml (6.5 tablespoons) extra virgin olive oil
- 1 tablespoon honey
- 1/2 teaspoon salt
👨🍳 Instructions
- Peel the garlic cloves and place them in a mortar with the salt. Using the pestle, pound and grind the garlic into a smooth paste, crushing it thoroughly until no lumps remain.
- Add the honey to the garlic paste and mix well with the pestle until fully incorporated and the mixture is smooth.
- Begin adding the olive oil drop by drop while continuously grinding with the pestle in a circular motion. This slow incorporation is crucial for creating a proper emulsion.
- Once the mixture begins to thicken and emulsify (after about 1/3 of the oil), you can add the remaining oil in a thin steady stream while continuing to grind vigorously.
- Continue grinding until the aioli reaches a thick, creamy consistency similar to mayonnaise. Taste and adjust salt if needed. The finished aioli should hold its shape when lifted with the pestle.
💡 Tips & Variations
- Keep all ingredients at room temperature for better emulsification
- If the aioli breaks, start with a fresh garlic clove in the mortar and slowly add the broken aioli back
- Can be stored in the refrigerator for up to 3 days covered
